Farmers Market Squash and Tomato Sauté with Egg

These last few weekends of summer are so important to me. It’s a time to get that last bit of freedom in before the school year starts. A couple of weekends ago, I went with a friend to the farmer’s market. We had such a good time chatting with the farmers about their gorgeous produce. I purchased colorful, ripe produce that smelled lovely. I couldn’t wait to get home to sauté up some veggies. My favorite dish thus far? A farmer’s market squash and tomato sauté with egg on top. Yum!

Here’s how I made it:

First, I chose the brightest, freshest, best-smelling produce at the farmer’s market. When you are at the market, don’t be shy to speak with the farmers about what is good this week – they will be happy to talk about it!

Farmers Market Finds

To begin the cooking process, I began warming a teaspoon (or so) of olive oil in a stainless sauté pan.

While the pan warmed up, I took out a slice of purple onion and chopped it into small pieces. Then, I cut the farmer’s market squash in half, and into thin slices (about 1/4 inch thick). Next, I sliced the cherry tomatoes from the farmer’s market in half.

After cutting up the veggies, I added the onion and squash to the pan. Once the squash began to brown, I flipped over the slices and added the tomatoes.

Once the tomatoes were nice and blistered (but not mushy) I took them out of the sauté pan and added them to a bowl. I then added a misting of olive oil to the pan and cracked and egg.

While the egg was cooking, I chopped up some home-grown basil. By that time, one side of the egg was done. I flipped it over to fry up the other side (carefully, so that I didn’t break the yolk).

Once the egg was cooked the way I liked it (slightly runny is my favorite), I added it to the bowl of tomato and squash and topped with the chopped basil and a turn of cracked black pepper.

How delicious is that?

The dish was satisfying, interesting, and so so fresh.

If you want to add some grains to the dish, you can do so by incorporating quinoa, rice, and faro. All add a nutty flavor and fun texture. Or, you can even serve it up with a thick slice of whole grain bread!
